The prettiest thing I ever made

I found a recipe somewhere on the web for salmon baked with cheddar cheese. Like a lot of the people who commented on the recipe, I thought salmon and cheddar cheese sounded gross, so I went with a few of their suggestions. I put the salmon over small potatoes and asparagus. I salted and peppered liberally. And at the end, I added a little chevre mixed with walnuts.

So, it was lovely to look at, but how did it taste? Well, the salmon was underdone, the potatoes were a bit scaly because I put the salmon right on top of them. Oh and they were underdone, too. But the asparagus came out quite well. One out of three isn't exactly batting 1000. But it was edible, especially after I put the salmon back in the oven so that it was overdone. Luckily, Ransom is very nice and encouraging when I try to cook, so I don't think he minded too much. We didn't have to throw the whole thing away and order a pizza, at any rate.

Next time, I'll put some parchment under the salmon and pre-cook the potatoes a bit. And I'll let the salmon cook just a smidge longer. Maybe someday I'll be able to make this as tasty as it is pretty.
